Add the leeks and potatoes to a large frying pan, crumble over the stock cube and cover with water so that all the vegetables are well covered. Bring to the boil, turn down to a medium heat and simmer for approximately 15 minutes, or until most of the liquid has disappeared and the leeks and potatoes are soft and falling to pieces.
Meanwhile slowly cook the sausages (fry or grill) using a little fry light (or similar) and slice.
Stir in the honey and mustard
Add the kale and cook for a further 5-10 minutes
Add the sausages, and heat through, cook for a further 2 minutes,
Remove from the heat, add the cheese and continue to stir until cheese melts.
Serve immediately.

1 pack of Joes sausages
1 large leek/ 2 smaller leeks finely chopped
1 packet of new potatoes sliced
Handful of curly Kale
1 tablespoon of runny honey
2 heaped teaspoons of whole grain mustard
1 stock cube ham or chicken
Handful of low fat grated mature cheddar
