Combine the soy, merin and ginger into a non metallic bowl.  Add your lean Joe's Rump steaks then cover and marinate for 10 minutes

Cook the rice according to pack instructions, drain and keep warm.

Spray a large non-stick frying pan with a little oil and set over a high heat.  Add the steaks to the pan (reserving the marinade) cook for 2 - 3 minutes on each side.  Transfer to the plate and cover with foil to rest.

Add the sugar snap peas, broccoli and pepper to the pan.  Stir fry for 3 mins, then add 2tbsp of the marinade and cook for a further 1 minute to heat through.  Divide among 4 plates and scatter with Coriander.

3tbsp reduced salt soy sauce
2 tbsp mirin (rice wine vinegar)
2tsp grated fresh ginger
2 x 200 g Joe's lean rump steaks or
200g white rice
Cooking spray oil
150g suger snap peas
250g tender stem broccoli
1 red pepper - sliced
small handful of fresh coriander - chopped
