To make the cherry tomato salsa mix together the cherry tomatoes (halved), spring onions (chopped), garlic (crushed), yellow pepper (deseeded and chopped), juice of 1 lime and fresh coriander (chopped).

Cut the joes cajun pork steaks into thin strips and dry fry or cook on the BBQ on a lowish heat for 6-8 minutes. Meanwhile mix together a small pot of low-fat natural yogurt with the zest and juice of 1 lime.

serving suggestion

Serve the pork piled into wraps with shredded lettuce, the cherry tomato salsa, and zesty yogurt and roll up.

Top Tip

Delishous on a hot day cooked on the can do this recipe with any of the marinated meats.
